This section is for some of my favorite recipes and tips I have learned over the years of my cooking experience. People have gotten out of the habit of producing good food in exchange for the quick and easy fast food, frozen foods, and in general, junk food.

A primary staple to man’s diet has always been a meat of some type. Without getting into the history of man’s past and the hunter-gathering abilities, man did learn to eat and use most parts of the animals he killed. He learned to eat creatures of the sea, the air and of the land. Through trial and error and time, we have learned that the preparation of meat varies depending on the resulting product desired. I enjoy brining meats that I either smoke in one of my smokers or roast in one of my ovens.

To tenderize the meats and to add flavor, man learned the art of brining. That is where he would soak or cover the meat with salt and water with various degrees of sugar, spices and herbs.

B A R B E C U E   S A U C E

bbq sauce

Barbecue sauce is a flavoring sauce used to spice up or enhance meats that have been cooked. Some can be added early in the cooking process while others are added towards the end of the cooking cycle as they have a high sugar content that can burn.
