Pastries

Pastry is a term used for breads that have a much higher fat content. It is this higher fat content that lends to a tender, flaky crumby texture. The crust should be light and airy yet strong enough to contain the filling. A pastry is also where the dough is rolled out and spread with butter and folded back in on itself to form many layers, as in a croissant, or a Danish pastry.
