Jim’s Best Baby Back Ribs

Brine
4- 6 lbs ribs, usually 2 – 3 whole racks of 13 ribs
1 large sweet Vidalia onion
1/4 cup garlic, granulated
salt and pepper to taste
12 oz Mango nectar

Rinse the ribs and cut the racks in half, minimum of 6 ribs per rack
Lay them out on a baking sheet and dust them, on both sides, with salt, pepper and garlic.
Lay them in a baking pan, one leaning upon another.
Coarsely chop the onion and sprinkle it over the tops of the ribs.
Pour in the Mango nectar.
Cover with plastic wrap to seal it good.
Put into oven at 170° F
Leave minimum of 7 hours or overnight.
Refrigerate afterwards

To Serve:
Get grill or griddle HOT!
Put the rack on the grill and leave for three minutes.
Turn after three minutes and cook for 1 1/2 minute,
Slather with preferred barbecue sauce and cook for another 40 seconds.
Turn and slather remaining side with sauce.
Remove and serve.
Serves approximately 4- 6 people.
